first off, i would seriously consider switching premix oils. yamalube is junk. i recommend klotz at 40:1.
i would start off with 48 pilot and 165 main. i would imagine youll work your way down from there. youll probably settle on 160 or 162 main and maybe a 45 pilot.
I would really consider going with the +6. If you're making any power at all, you're gonna be pulling that front end like no other with the +4. I had a 4mm stock cylinder motor making 75hp and with 10 paddle haulers that thing was like a fucking buckin bronco. Pulling 2nd gear holeshots was tricky to keep the front end down. Like said, once you're used to the +6 you won't be able to tell the difference between the two. And like bigred said, on down the road you'll already have the longer arm for when you go to a bigger motor.
instead of using starting fluid to make the bike rev up, use brake/parts cleaner. instead of making the bike rev up, when the parts cleaner seals up a hole, the idle will come back down.
have you checked to make sure your plugs arent fouled? are you getting good spark?
340 mains and 30 pilots sound a little rich. assuming that these carbs jet like stock, you shouldnt need any more than a 27.5 pilot in there.

this scenario doesnt even make sense. how is the bike revving up if the both of the carb slides are down? no gas = no revs.. are you sure the slides are all the way down? have you checked to make sure there are no kinks in the throttle cable?
sounds like youre just making enough power that its not shifting under a load. a modded shift star and shift shaft should help cure it a little to where you can get it to shift.
i would also pull your clutch cover off and check to make sure that your shift shaft is centered on the shift star. the adjustment is the eccentric bolt that your shift shaft slides over when you insert it into the cases.
yes you can. my new front shocks that ive had for like 5 or 6 years now came directly from elka.
