They need to measure the cyls, then determine how much material needs to be removed based on damage, oval shaping, scaring etc. in order to get a good bore. Then you order pistons and bore to the piston and desired clearances.
Domes, you will probably have to just mock everything up in order to figure out what you have/need. Sort out which base gasket gets the piston edge situated around the ports where you want it. Then torque the cyls and check them with a good straight edge. Now you can measure deck height. With that dimension you can call a multitude of different guys who can cut you domes.
