I'd say do the stockers if you have some. Because you will need to buy all the same components to make it run around the 75 HP level as you would with a properly set up serval. The main difference between the serval and stockers is the little bit of displacement increase allows you the extra power on pump gas as opposed to race fuel. You can have your Athena's done to, but they will need to be done by someone who really knows how to massage them. For something like what you're looking for, the builder won't be actually raising port durations and timings. They will be more focused on cleaning up and tweaking angles.
