those carbs are too big unless you have a stroker or are ported, you should have kept the stockers...They will run but you are going to loose some low end.

 

You would be amazed what that needle position will do... Also it does sound like your mains are off with such large carbs maybe you need a smaller main than with stock carbs. Get it to run good WOT then play with the needle...

Check your reeds. I just had a similar problem, and i had a cracked reed.
