I watch for drips coming out of coolant overflow hose.

My current bike just has the overflow pointed at the pipes where they mount to the cylinder. Instant steam up if there is a boil over.

This.  Smell coolant??  It's too hot.

I'll never smell coolant. I run straight distilled water with water wetter.
