What better and more reliable in trails and open fields riding 4 or 7 mil serval. and what type of setup should I go with. Just need some good ideas.

I can´t say much, but 4 mm stroker crank is a "drop in". Anything more needs case work.  I think the price for 7 and 10mm is the same, so I would go 10 before 7.

Go as big as you can afford. However, a ported 4 mm serval will probably be a better motor then an Unported 7 mm. So make sure you can also afford to do all the little nuance items to the bigger motor or it won't perform the way it should.
