Where does the coolant spill out of? You might want to make sure that the coolant not leaking into the cylinder at the head. If your overflow cap blows out when you rev it up there is a good chance you have a leak.

Make sure that the choke tube is installed between the carbs. Without the tube the right cylinder runs lean

Was the quad running before you adjusted the gap? What gap did you adjust? Did you try a new spark plug? Need more info
