If I am thinking right it may be the same builder that took almost 2-months to tell me he didn't have the parts to complete my 4mill Serval b/c his crank parts were still sitting in customs(cheap Chinese shit). On your wifes bike, the main should be in the 280-320 range so the 300 that's in there should be pretty close. Try a 27.5 pilot jet as well as 1.5 turns on the screw. Also make sure both slides are moving at the same time and that you have the tube between the two carbs connected.

People build these b/c the geometry of the frame is better. Handling is improved as well as reduction in weight. So in a nut shell its like taking a powerful motor and putting it into a lighter and better handling vehicle.

I dont know if anyone has mention this but, I only run the Vito's Racing +4mm polished rod cranks. The rods are built very solid and thick all the way up and down(no homo). I feel they are some of the best cranks you can buy and have purchased two them and never had an issues at all with them. I would recommend them to anyone.
