Do builders cut 2 mm out of a stock head to clear the 4mm crank?

I picked up a shee last week and it was advertised a 400cc by alba but it didn't have the plate. It had no port and 310 jets and the pistons are coated in carbon because the jetting was rich. I can't read the top of pistons with video scope. Any other way to check besides tearing it down?

I put 290 mains and its good now

Yes it can be done. you can measure the stroke using something like a pencil doen the spark plug hole. make a mark at top dead center and bottom dead center. stock is 54mm so 58 is a 4mil crank.
