I have 35mm mikuni carbs that I got at a great price. I was told they could be rejetted to run gas. All I know is the main jets are 340. I need help!

I have a bone 97 shee. I recently bought T5 pipes, jet kit and k&n 2:1 air filter came with the pipes. I'm going to advance the timing +4, and get v force 4 reeds. I trail ride and also drag at some local tracks. I need help with my sprockets. I'm 6'2 n 230lbs. Help me plz
