Yes. If the motor held with 6 stockers before, you can run them as well now.

Yes you can. That will give you way more then enough base prussure. Shit you could run 4 stock spring and two hd.

The manual has tolerances for OEM plates. Do you use those same numbers for aftermarket clutches?
