  1. If the pressure in the system increases, then boiling point increases. This helps prevent cavitation of the hot liquids in the pump. Also helps prevent boiling of the coolant in other low pressure areas of the system.

  2. your numbers are useless and false. you are running a heater that heats the coolant. Reason the numbers drop isn't because of the t-stat but because the heater turned off.
